First attempt at making a tomahawk steak last night. Highly recommend. It turned out to be super easy. Truffled mustard & smoked pancetta mushrooms for the win!! 🤤🤤🤤

It’s always nice to have friends over for a feed, a bottle or 2 of wine, and chat about time displacement, logical futurist predictions, and the socioeconomic impact of digital consciousness.

This “Freestyle Granola” is a great find and now probably a regular breakfast option. Heaps of variations possible… I just wish I remembered where I found it? 😅. Either @harrisfarmmarkets or @aldiaustralia when I was perusing their special buys 😄.

I might try to make my own. “Watch this space”?🤦🏻‍♂️ (hate that term) but yeah… you just watch! 😂.

Either way. This has made breakfasts super easy! 🤩.

No real recipe. Just throw everything in a bowl and serve.
Mix the blueberry spirulina powder & your choice of plant based milk thoroughly before pouring it into your bowl. Otherwise you’ll get chunky monkeys in there. 🙃

The “Not so Green” Curry
This actually turned out better than I thought haha
I don’t usually like packet sauces but this one isn’t too bad. I did however add a few things.

Ingredients:
1 x Breast of chicken, diced
An assortment of veggies that you like
1 cup of veggie stock (or chicken bone broth)
A pinch of each: ground ginger, chilli flakes
1/2 teaspoon of @freefod garlic replacer
1 tablespoon of garlic oil
2 tablespoons of onion oil

Garnish: Toasted coconut flakes, black sesame seeds, a wedge of lime (or lemon).

Love these easy overnight oat & chia seed puddings 😄. Such an easy start to the morning and it’s kind of like a “choose your own adventure” breakfast toppings. 😅

This morning I opted for:
Blueberries
Peanut butter
Cacao nibs (you could also opt for 1 cube of roughly cut up dark chocolate…. Or both? 😂🤷🏻‍♂️)
Dried shaved coconut chunks
F.H.C. meal
Pumpkin seed clusters
Finished off with a dollop of maple syrup & hemp seeds. 🤤

To make pudding:
2 Tablespoons of organic chia seeds & oats.
Fill with your choice of milk (I like cashew milk with this 😄).
Leave covered overnight in your fridge.
Assemble in the morning. Done!

Now for some more complex challenges for the day 😂. Enjoy!

There’s nothing quite like a weekend shashuka brunch. I was a bit hungry so did a bit of a quick cheat 😅.

Serves 1: just multiply quantities for more serves.
~20mins
1/2 tin Italian chopped tomatoes
1 teaspoon of tomato paste (try and find a fodmap friendly one or just plain concentrate. No additives).
1/2 teaspoon of each, smoked paprika, ground cumin & chilli flakes, @fodshopper garlic replacer, garlic & onion oil. Salt to taste.
Red capsicum
Put everything in a pan & simmer away for about 5-10mins.
You can crack your eggs and put in the oven now if you want (~15-20mins / 180 Celsius / 356 Fahrenheit)

I poached 2 poached eggs and added some mackerel fillets & popped into the oven with the flatbread to keep cooking/keep warm.
Finish off with a squeeze of lemon, some chopped parsley & mint, as well as your choice of seasoning if you want (I did cracked black pepper & smoked paprika for the eggs; & dukkah on the fillets). Serve with freshly baked dukkah & mixed seed, truffled sourdough flatbread.

Fruit vinegars (pineapple & lime, cranberry, and apricot).
Mango & Fig waiting 😅 ran out of pickling jars.

Depending on how these vinegars go they could be a great compliment to salads, sauces, and even as a flavouring for seltzer with fresh mint, or rosemary, or even fresh lime juice.

Will make some recipes once these are done and tested. 😊

The flatbread turned out increasingly well!! Used the day 3 flush from my sourdough starters 🤩. Never buying bread or pasta again!!! 🙃 it’s so easy to make at home. Best Buy is, everything gluten free/low fodmap.

There’s nothing quite like getting your hands dirty and creating something 🥰. There’s just something really cathartic about it.

Got a bit bored so thought I’d try my hand at making gnocchi. Total beginner, I’ve never made pasta before.

But after today… I don’t see why I would ever buy store bought pasta again 😍.

Also love that @colessupermarkets have made this SUPER easy with their Lofo wheat flour. 🤩

I ❤️@colessupermarkets & @harrisfarmmarkets best variety, heaps of fresh options and caters to every diet easily. 😁

I haven’t found as many fodmap friendly options in @woolworths_au unfortunately.

This recipe (~4 serves) is literally
1 medium sweet potato,
1 egg,
~1 1/2 cups of the @lofopantry wheat flour,
& 3 scoop of the @olssonssalt smoked red gum salt (Don’t forget to salt your water when boiling). Knead until dough like. Add more flour progressively if needed.
Roll, cut, shape.
You’re DONE! 😄🤩
Finish by dusting them with flour so they don’t stick together. You can freeze what you don’t use for a quick meal when you’re short on time.

Going to make a sage burnt butter, Parmesan & toasted breadcrumbs for dinner to accompany these beautiful orange morsels of happiness 😊.

Buttery mashed potato & parsley w/ black caviar.
(Idea: turn this into brunch with a Zataar poached egg 🤔).

Garnished with purple carrots, fresh mint leaves, crispy truffled hash brown & coconut yogurt as substitute sour cream.”

The LoFo Glo smoked trout edamame quinoa & watercress salad. With ALL the accoutrements. 😍 finished with marinated goats cheese, hemp seeds, black pepper and a creamy lemon dijon dukka vinaigrette.

I opted to swap out the Kalamata olives with some pumpkin and it was a great decision. Gives it a much smoother creamer flavour. Maybe for spring the nice bite of those olives will be more refreshing. As well as adding some cucumber.

Overnight Chia & Oats Açai bowl
SO! Much goodness in such a tiny bowl 😍🥰.

Açai berries are from açai palm trees in the rainforests of Central and South America. They have a dark purple skin and yellow flesh surrounding a large seed.
Because they contain pits like apricots and olives, they’re technically not a berry, but rather a drupe. Nevertheless, they’re commonly referred to as berries. 🤓🙃

They have an earthy taste that’s often described as a cross between blackberries and unsweetened chocolate. Probably not the best mix for the bowl knowing this now.
I’d probably do blueberries and pineapple. It needs a bit of a kick for flavour.

But silver lining…. That plating tho 😍😎

Note:
These berries commonly contain trace minerals, including chromium, zinc, iron, copper, manganese, magnesium, potassium and phosphorus as well as healthy fats & only a small amount of sugar. The big star is the anthocyanins, which gives the berries their deep purple colour. This acts as powerful antioxidants in the body.

You can also find anthocyanins in other blue, black and purple foods, such as black beans and blueberries.

Benefits:
Helps fight free radicals in your body
May lower cholesterol
May have a cancer shielding effect
Could boost brain function

Vegetarian Moussaka 🤤🤤🤤
Omg! One of my favourite winter warmers. 🥰 1/2 for now and have another 3 meals. 😁
These can also easily be frozen as quick microwaveable/oven reheatable meals for when those days get a bit too long and busy.

Be careful with eggplant or aubergine as some people are intolerable. Luckily I can still eat it 🥰.
1/2 portion is roughly 2 slices of grilled eggplant.

I was sad to hear that pretty much ALL mushrooms are HIGH fodmap. But then after some research and some trial and error I found that you CAN still enjoy mushrooms 😊. Limited to Shimeji (1 cup), King/Trumpet? (1 cup), Oyster (1 cup), black fungus/wood-ear (1 cup), AND! The pièce de résistance *drum roll please* … TRUFFLE oil (drink & snort the bottle)! In olive oil is low fodmap as fodmaps aren’t fat soluble. 😊
Truffle recipes to come.

Other mushrooms include:
Canned Champignon Mushrooms (1/2 cup serve), Dried Shiitake Mushrooms (2), & Dried Porcini Mushrooms (1 tablespoon)

Meat substitute: 4 day sprouted lentils, king & oyster mushrooms, purple carrot, onion & garlic oil, @freefodfoods garlic replacement 😍

Béchamel substitute: Parmesan butter mashed potatoes (Save the water the potatoes were cooked in for the mash).

When I first started down the Low Fodmap path I didn’t really know where to start and I thought I’d miss out on all my favourite foods.

After some research, this is what a bulk shop looks like and I actually am not really missing anything that I wouldn’t normally eat.

The most important thing after you complete a fast is to ensure your gut has all the micronutrients, & fibre it needs. Plenty of water during the fast as well as with meals s you come out of it. You should ease into heavier meals progressively.

What do you eat?
So my diet mainly consists of LoFo Ketogenic Pescatarian? Wow! That’s a mouthful 😅
I also like to do vegan/vegetarian, GF, & LoFo meals as well and have started to include a LITTLE bit of meat to mix it up a bit.
I try not to eat too many processed or deep fried foods but my reptile brain just loves that insulin spike sometimes 😅.

The most important thing after you complete a fast is to ensure your gut has all the micronutrients, & fibre it needs. Plenty of water during the fast as well as with meals s you come out of it. You should ease into heavier meals progressively.

What do you eat?
So my diet mainly consists of LoFo Ketogenic Pescatarian? Wow! That’s a mouthful 😅
I also like to do vegan/vegetarian, GF, & LoFo meals as well and have started to include a LITTLE bit of meat to mix it up a bit.
I try not to eat too many processed or deep fried foods but my reptile brain just loves that insulin spike sometimes 😅.

Grilled smoked Mackerel with roast pumpkin, grape tomatoes, capers, and parsley in a garlic brown butter lemon caper sauce. Finished with toasted pumpkin seeds, pine nuts & lemon zest. A side of salad w/ a lemon dijon dukka vinaigrette + 7 seed sour dough dinner roll.

Mondays are usually the busiest so don’t have time to snack. A big lunch usually helps get through that 3pm without worrying about a “reaction” 🥳.
